An Eggciting Baked Potato


Hello hello!

I have this obsession with potatoes. Whether it be fries, potato skins, baked name it and I will eat it.  I was looking through the interwebs, I saw this recipe for a carved out baked potato with bacon, cheese and an egg in it. Had to try it and uh its DELICIOUS.

Let’s get to it, shall we?

You will need:

Russet potato


Bacon bits*

Shredded cheese

1 egg

* You can either use prepackaged bacon bits or cook the bacon yourself. I chose to cook the bacon myself because the prepackaged ones are full of preservatives and chemicals I can’t pronounce. Plus, bacon is really easy to cook and makes your house smell bacon-licious. Just cook it until its crispy and let it soak on paper towels to get rid of excess fat. mmm..

Ready? Set.. GO!

  1. Wash your potato and then bake it the way you like.
    1. Need a faster way to bake it? Set your oven to 350 F. Puncture three holes into the potato using a fork. Put in microwave for 4 minutes. Then run it under water to make it wet again and put it in the oven for 15 minutes. WAHLA baked potato. 🙂
  2. Carve out the potato but don’t go too crazy because you still want some potato left in that skin. You can make mashed potatoes with the extra potato but…I was so hungry that I just ate it while making the recipe haha
  3. Fill your potato with your bacon and cheese.
  4. Crack an egg into the potato and salt/pepper as you like.
  5. Top it off with as much cheese and bacon to make it perdy
  6. Put it back into the oven for about 20 minutes or until your egg is cooked the way you like pero like not raw.

AND there you have it! A delicious breakfast, lunch or dinner. Isn’t that eggciting? Okay okay that was cheesy. 😉

Recipe: Cold Brew


Cold brew has been my favorite way to make coffee for about a year now. It tastes smoother and less bitter than your traditional iced coffee. It requires no heat and is very simple to make! Put it together the night before and you’re ready to go in the morning!

Here’s what you’ll need:

  • 1 – 32oz. Mason Jar w/ lid
  • Your choice of ground coffee beans
  • Filtered water
  • Coffee filter

The ultimate ratio is 8oz ground coffee to 36 oz of water. But I usually eyeball it and then fill the mason jar up with water. Then shake it to mix the grounds with the water.

The next step is patience. Yep, you read that right. Patience is key in making cold brew cause you’re going to put it in the fridge and let it sit for 12 hours. Let’s see, what can we do in that 12 hours? Eat. Sleep. Repeat. 😉

I just make it after dinner and put it in the fridge. That way, when I wake up in the morning, there will be a mason jar of yummy cold brew waiting for me! More motivation to wake up haha!

I don’t drink it plain tho. Oh no, that was disastrous. I miserably drank it without creamer until I realized that I could go get creamer to make it taste better…and less painful..

I recommend:

  • Hazelnut (my fav)
  • French Vanilla
  • Caramel Macchiato

But drinking it without anything is fine too.

Travel Food Diary: Santa Cruz 2016


This past weekend, my boyfriend and I took a trip to Santa Cruz and we ate food. Lots and lots of food.

I’ve seen people wear the infamous Pizza My Heart shirts but I never knew what it was or where it was. When we saw one in downtown Santa Cruz, I had to go. When you order, they take a slice from the counter and put it in the oven to heat it up. While the pizza looked delicious, the line was sort of long and the service was a bit slow. *grumble grumble* I was so ready to eat. The pizza itself was tasty but…the crust was bland. It either crunchy or forgettable. Boo…but I still think its worth a try! Plus, I got a snazzy new t-shirt to wear out. Shameless advertising?

Deep fried Oreos: 

WHY IS THIS A THING? AND WHY IS IT SO EXPENSIVE? But really, I wanted to try something new so YOLO!!! It just tasted like a donut. I expected the Oreo to be crunchy but instead, it was soft and mushy. Oh wells, I tried it. Byebye $5.00…..

Pacific Coffee Roasting Company & Cafe

I found this place on Yelp and it had really good reviews. Located not too far from Santa Cruz, this little coffee shop satisfied my coffee addiction. The Cafe Borgia was delicious…and instagram worthy.  I lowkey wish I got it in the mug so it would be even more instagram worthy haha! #thestruggles

I loved how the coffee wasn’t super sweet like your typical Starbucks drinks. But towards the end, it got sweeter. Something tells me I was supposed to mix it but it was just too pretty! I don’t remember how much it was but it wasn’t too pricey. I recommend trying this place if you’re ever in the area!

Someone recommended this to my boyfriend and we happened to be in the area so… ice cream for lunch?  It had a really cute vibe to it and there were several unique flavors too. If you’ve never been there, don’t fret! They let you sample the flavors before you order. That way, you don’t get something you regret. I got the Chocolate and Sea Salt ice cream in the kids scoop. I’m not much of an ice cream person but damn, this place was so good. Even though it pretty much melted when I finally got the perfect picture of it. still… delicioso. ❤ great, now I’m craving  ice cream but until next time Santa Cruz..

Review: Cookies & Cream


Location: South Pasadena, Los Angeles area, California

Price: $3.95 for a scoop but you can do 1/2-1/2

I remember when this place first opened, I thought it was the coolest thing ever. It was a place that served fresh warm cookies along with unique flavors of homemade ice cream. Of course, they also have your classics like chocolate.

I was greeted with an upbeat hello! and a smile, and the server offered me some samples of their new flavors. They were very tasty. After trying a bunch, I ended up going with 1/2 purple lavender and 1/2 cappuccino. The purple lavender didn’t have a strong lavender taste after a few bites but damn. that cappuccino was feeding my coffee addiction. I love coffee and that definitely tasted like coffee. aha I also love the aestestic effect of putting that piece of waffle cone. It just made it look so.. hipster lool and I’m a sucker for that.

The shop itself isn’t very big but it is adorably decorated with stuffed animals pinned to the wall. Too cute too cute. So, my ratings are as follows:

Variety of flavors: 5/5 supes unique

Taste: 3.5/5 flavors were good but it could be creamier …but im not an ice cream connoisseur.

Service: 5/5 she was very welcoming and helpful!

Price: 3/5 …it’s a bit pricey for ice cream but its a unique little shops, whadya expect?

Chikspinachavoquinoa Bowl


I recently learned how to cook quinoa but quinoa by itself is a bit bland. Yuck. So, I started searching for inspirations to make quinoa not only a nutritious part of my everyday diet but also tasty! Alas, may i present to you….*Drumroll pleaseee* the Chikspinachavoquinoa bowl!!! (or the Chicken Spinach and Quinoa bowl)

Lets get to the nom noms! ❤


Boneless chicken thighs


Spinach or any kind of greens like you like! Arugula is tasty!

Avocado (Optional)

Garlic salt 


2 tbsp Chopped Cilantro


Quinoa is very simple to make. The ratio is 1 part uncooked quinoa and two parts water. So for me, I did 1/2 cup Quinoa and 1 cup of water. Make sure you rinse the quinoa before you cook it. Rinsing your quinoa will wash off the natural coating that can make it taste bitter. Bring the water and quinoa to boil and then turn it down to low heat. With the lid on, let it simmer for 15 minutes. Turn off the heat and let it stand for 5 minutes. Finally fluff it with a fork! And stir in 2 tbsp of chopped cilantro. 


Season the chicken with the garlic salt and pepper. Cook the chicken on medium heat, turning it after 5 minutes. Be careful! It’s hot! Check your chicken to make sure its all cooked. If its cooked through, take it off the heat and cut it up into small cubes.

Assembling the bowl:

You can top this bowl with whatever you’d like. I just used my favorites. In my bowl, I placed a generous amount of quinoa, then I layered a generous amount of spinach and topped it off with my chopped up chicken and some avocado.

And there you have it, a Chikspinachavoquinoa bowl! Best part of this is that you’ll have left overs for tomorrow’s lunch! Just layer it in a mason jar and you’re ready to go!
